Spicy cajun vegetable roast.

Simple.  Slice sweet potatoes, red bell pepper, red onion, and carrots.  Toss veggies in a pan with 1 tablespoon coconut oil, 1/2 cup of water, and Tony Chacheres (or any cajun spice mix you have).  Roast in the oven at 350 for 30 min. Take out and mix up the veggies, add water if needed.  Put back in oven for 15 more minutes.  Try them and if you like them softer try another 15 minutes.  I tasted cajun sweet potatoes at Whole Foods.  It is now one of my favorites.  The combo of sweet, salty and spicy is delicious.
