Simple 3 ingredients , protein packed, low carb, low sugar pancakes.

This recipe was shared with me by my dear friend Katie.  She actually visited us and made them for us for breakfast.  My kids and I loved them.  Thank you Katie.  I make these every three days.  I make a double batch and refrigerate the leftovers (2 more days worth for our family).  There are 3 ingredients.  Equal parts.   Oatmeal, egg whites and low fat cottage cheese.  So I started with 1 cup each and because refrigerating them works great, I now do a double batch.  I add cinnamon and stevia so that I enjoy eating them without the syrup or powdered sugar.  My kids get to choose each morning pancakes with butter and syrup or  crepes with a little powdered sugar.  I scramble the egg yolks for the kids so no part of the egg is wasted.
Heres the recipe:

Equal parts: oatmeal, cottage cheese and egg whites.  Puree these in a blender , all three ingredients.  Pour and flip like a pancake.

I add 1 heaping tbsp of cinnamon and 3 tsp of stevia.
But you can get creative and add whatever you like .
Try them they are awesome.
